Pineapple Upside Down Cake

I remember growing up I would notice this weird looking cake in the kitchen every so often. What was it? This odd but beautiful looking cake had round pineapple slices on top and cherries! Was it a cake or a piece of fruit!?

Years later of course I grew to love Pineapple Upside down cake and enjoyed making it with family even more. It’s just a really fun cake to make and it’s incredibly easy.

Here’s what you will need:

1 Box Yellow Cake Mix

3 Eggs

1/4 Cup Vegetable Oil

Canned circles of pineapples

Maraschino cherries

Juice of one can of sliced pineapple

1/2 Cup of light brown sugar

1/4 Cup of Maple Syrup

Here’s how you do it:

In a small sauce pan put the juice from 1 can of sliced pineapple, 1/2 cup of Brown Sugar and 1/4 of Maple Syrup and heat over low heat.

Mix your Yellow Cake mix per the instructions on the box, which is fairly straightforward. Spray a round cake pan with PAM or grease. Pour your warm sauce into the bottom of the cake pan. Next carefully add in your pineapple slices, putting a cherry inside and around each one.

Next carefully pour your Yellow Cake mix into the pan slowly.

Bake 30 minutes at 375.

Once finished remove carefully and let sit and cool on the counter for at least 30 minutes.

Now the fun part! – You will need to flip the cake over revealing the beautiful pineapple design on top. Place a large flat plate over top of your cake pan using it to flip your pan over carefully. It’s ok if you have some sauce leak out the sides. Once your cake is now fully turned over the sauce will begin to seep into the cake itself making it a sweet and delicious treat!
